Research interests

Role of food biopolymers (polysaccharides and proteins) in food texture and quality - I am interested in understanding the role of the cell wall polymers in determining the mechanical properties of foods (e.g. potatoes, beans). I am collaborating with academic colleagues in the area of food processing (Dr Jianshe Chen, Dr Peter Ho and Prof Malcolm Povey) and protein biochemistry (Prof Michael Morgan), as well as industry partners, to develop this multidisciplinary area of research.

Fibre and Health - Two current projects focus on understanding the role of dietary fibre (and their subtractions) on starch digestion, the glucose response and the risk of type 2 diabetes (in collaboration with Dr Mel Holmes and Dr Victoria Burley).
